History

Chocolate has a history of sweetness and violence. The Mayans, the first ones to discover the cacao plant, are credited with perfecting this concoction in its earliest form. Even dedicating a god to Cacao.

The ever-conquering Aztecs also conquered the Mayans. They quickly learned to love the taste and the health benefits associated with this dark beverage.

'The divine drink, which builds up resistance and fights fatigue. A cup of this precious drink (cocoa) permits a man to walk for a whole day without food.'

Both the Mayans and the Aztec recognized the cocoa plant and beans as being very valuable even using it as a means of money exchange. The Spaniards seeing the value the Aztecs placed upon the cacao plant became very interested in the plant also.

It did take time for the Spaniards to gain a liking for the dark drink that they saw "more a drink for pigs than a drink for humanity."

Within no time the Spaniards began shipping the beans back to Spain. And there began the modern history of Chocolate.

At first the only Europeans able to afford this new beverage was the aristocracy. They didn't consume it in the same methods as the Aztec but preferred to drink it hot and sweet.

They were also the first to begin to add other spices from the new world.

Once they found that by adding sugar the flavor improved, the love for this new drink spread rapidly.

This also meant they needed to produce more. They began experimenting with different cocoa plants. Finally they found one, which although inferior in quality and taste, could produce a much larger quantity.

They found that by adding a few extra teaspoons of sugar that most Europeans couldn't notice a difference in quality.

In the Americas the slave trade facilitated the growth nicely and the trade grew rapidly.

Once slaves were outlawed in the Americas the plants were brought to Africa to be grown.

Historical dates

1828- "Dutching" or making cocoa into a powder to mix with water, was invented by Dutchman Coenraad Van Houten

1850's- Solid Chocolate - Created by a famous English chocolatear Joseph Fry. By mixing sugar, cocoa powder and cocoa butter you could create a paste that when it cooled became a solid.

1879- In Switzerland it was discovered that by adding powdered milk to chocolate it became more affordable and milder. Suddenly people from all economic reaches could afford the heavenly substance.

Health benefits

The Mayan and Aztec always recognized the health benefits of chocolate. Interestingly enough it's really only been in recent years that anyone has began any serious study of the cocoa plant.

What makes it healthy?

While cocoa is a powerhouse of nutrients from A-Z (Anandamide-Zink) What it is recognized the most for is it's level of antioxidants, amazingly enough even the poorest quality has some level of antioxidants

What are Antioxidants

Antioxidants are the compounds that help to prevent diseases like the aging, arthritis, strokes, cancers, heart disease and others. These compounds are found in great abundance in fresh fruits and veggies.

These compounds are what give fruit and vegetables their color. In fact the darker the color and the more bitter the taste the higher the level of antioxidants.

Making the dark brown and bitter taste of chocolate in its natural form very high in antioxidants.

I'm sure you've heard of some of the more common antioxidants such as vitamins C and E. Researchers are still trying to identify many of the other ones and how they affect our bodies.

Why do we need Antioxidants?

Antioxidants are our "Anti-Rust" formula.

Much in the same way an apple or banana will turn color once it's exposed to the air, we do the same thing.

As a new baby we begin to take in oxygen and as we do so our body begins to "rust" or rather break down.
When we eat foods rich in antioxidants we protect our body much in the same way that pouring lemon juice, a natural antioxidant, over fruit, stops it from turning brown.

Free Radicals

It's these free radicals that you are protecting your body from. Free radicals are molecules "gone wild". They are either missing an electron or have an extra electron. They become scavengers going in search of any other molecule that they can "steal" from. They are looking to neutralize themselves.

This creates a dangerous chain reaction. As one free radical attaches to a healthy cell, that cell then becomes a free radical and begins to scavenger themselves.

If this process goes unchecked then these mutating cells can create diseases. Just to name a few of the more common "free radical" diseases -- memory loss, aging, immune system disorders or even cancer.

Neutralization of Free Radicals-

The goal for our body then should be to neutralize the free radicals, and this is what antioxidants do.

They do this by using one of their carbon atoms, with it's strong bonds. As they are sitting there when a free radical comes along they are able to latch on to the free radical. They are then able to carry the free radical with them out of the body.

This is why it is so important to have a constant supply of high antioxidant foods to help eliminate free radicals from our bodies.

Chocolate, for me personally, is the most delicious way to keep free radicals in check.

Types

There are many varieties of chocolate. Below are a few of the most common varieties and uses.

Cacao vs. Cocoa

Cacao is the industry term used for the tree and fruit. Once the pod is opened the fermenting process begins and the name changes to cocoa, such as cocoa butter
cocoa bean etc.

Cacao pods - This is the football shaped fruit that the cacao tree produces. It's about 5-12 inches long and 3-5 inches wide. Within each of these pods you'll find about 30-40 seeds. It takes about 20 seeds to make one pound of cocoa.

Cocoa Beans - The fruit of the cacao tree, found inside the cacao pods.

Nibs- Once the cocoa beans are removed they are left to ferment. This helps to develop the deep flavor and aroma and also helps reduce the bitterness.

Once the fermentation process has taken place the beans are laid out to dry. Once dried the outer shell of the bean is removed. They use a crushing tool to do this which many times crush the seeds into what they call "nibs". Nibs are nothing more than crushed pieces of cocoa beans.

One of the easiest and healthiest things I love to do is to add nibs to smoothies, on fresh fruit, in puddings or sprinkled on top of a soufflé. This just adds to the already rich deep chocolate flavor and increases the nutritional value of any food.

Cooking

The two things that will destroy chocolate are moisture and excessive heat. As long as you have that basic knowledge there really isn't anything to stop you from using it.

It will grain and thicken with excessive heat, so be careful if you are using a microwave. With moisture even a very small amount will increase its viscosity, making it unacceptable for dipping.

Always store in odorless, dark, cool places.

Melting

Home Melting
A double boiler is the easiest way to melt chocolate. Do not allow steam to be coming up from the bottom of the boiler, since this could potentially ruin it.

If it becomes unworkable just add ½ T of oil and while stirring vigorously re-melt.

Professional Melting Options

Electric Frying Pan- While this is not a "professional" method if you are the "occasional" chocolatier this is a less expensive method. An electric fry pan will keep your chocolate at the perfect temperature while you work with it.

Professional Tempering Machine- If you desire to work like the pros then a professional tempering machine is what you'll need. I recommend one put out by Sephra, the leader in fondue fountains.

Candy Making Workshops

In learning to make chocolates a candy-making workshop is your best bet.

They will teach you all their tricks and techniques, while showing you the best quality ingredients.

Workshops are a lot of fun. You learn as you cover yourself in chocolate. That sounds pretty heavenly to me.

One of the best things about workshops is your chance to jump in with both hands. At a good workshop you will be cutting, melting and dipping your way to pure chocolate indulgence.

Tools of the trade -

The tools listed below are ones that have made our life easier. They are tools that we use on a weekly if not daily basis.

Cocoa Latte- This machine is a must have for those cold winter mornings. I turn this on first thing in the morning as I am getting ready for work, and it's perfection. The thing I love about the Cocoa Latte is it keeps the beverages at the perfect temperature.

Healthy Kids recipes should always include foods that are rich in vitamins and nutrients. Vitamin C is especially important for children. The good thing about Vitamin C is that it is present in a variety of fruits and vegetables.

Children need a daily intake of Vitamin C because it is important for maintaining a healthy immune system. Among the many benefits of Vitamin C for children is that it acts as a powerful anti-oxidant as well as an anti-inflammatory agent that prevents oxygen-based damage to the cells

Children can get their daily dose of Vitamin C by consuming a variety of fruits and vegetables. Fruit is a delicious food with wonderful colors and textures that appeal to children. Fruit is one of the easiest healthy foods to get kids to eat.

Fruits as well as vegetables are vital for the health and well being of children. Raw fruits are preferred because of their high fiber and water content. But frozen fruits and vegetables are still a viable source of Vitamin C that can be an alternative to fresh vegetables.

Vitamin C has to be consumed daily because the body does not store Vitamin C. Pediatricians recommend that children should consume at least 30 - 45 mg. of vitamin C per day. This is the minimum requirement. Parents should check with their own Pediatrician to confirm the requirement or special needs for their children. Children with asthma or other health problems may require a higher consumption of Vitamin C.

Some nutritionist recommends a daily intake of up to 200 mg./day of Vitamin C. If a child consumes the recommended daily allowance of five servings of fresh fruit or vegetables per day, they would be in this recommended target range.

The bad news is that less than 20% of children or adults consume the recommended daily allowance of fruits or vegetables. Meeting the minimum RDA can be as simple as increasing the kinds of fruits and vegetables consumed each day.

Citrus fruits like strawberries, lemons and oranges are delicious sources of Vitamin C. Fresh squeezed orange juice, or a homemade strawberry milkshake are favorites with kids. Fresh squeezed lemonade on a hot summer day will provide a healthy thirst quencher.

Try this Strawberry Fluff Recipe

Ingredients:

*16 oz. strawberries fresh or frozen

*1 pkg. colored marshmallows

*1 large tub of Cool Whip

*1/4-cup sugar

Instructions:

1. Cut up the strawberries

2. Mix with Cool Whip

3. Add sugar

4. Mix well

5. Stir in 1/2 to 3/4 package marshmallows

6. Refrigerate

There are other vegetables and fruits that contain high volumes of Vitamin C. An unlikely source of Vitamin C is broccoli and cauliflower. These nutrient rich vegetables provide over 45 mg. of Vitamin C in a ½ cup serving. Exotic but delicious fruits like papaya, mango or kiwi have high Vitamin C content. A slice of tomato provides 25 mg. of vitamin C.

The RDA recommendation provides the basic amount of Vitamin C that is needed to avoid a deficiency disease. But children have unique requirements for Vitamin C as they develop. A diet rich in Vitamin C offers a lot of health benefits for both children and adults.

Having elderly parents can be a medical challenge and a lot of stress for the children. In fact some elderly parents seem to think life is about having the best doctors and their self worth is actually determined by the number of doctors and specialists that they see--a subject that deserves it's own article.

My mother started having symptoms of an irritable stomach and bowel along with fatigue twenty years ago. I took her to a reputable iridologist (reads the iris of your eyes) who made dietary adjustments (removed fruit and sweets from her diet) and started her on various supplements. Seems that my mother's diet got skewed--she prefers fruit to protein and after several years of overdoing it with fruit, it fueled her symptoms.

The dietary change and nutritional supplements got her back to normal for a few years until she once again began abusing her diet with coconut syrup and fruit. The symptoms were very similar to what she had before. By now the iridologist had moved away and I have to find another iridologist or a new physician for her. I didn't live with my mother so I wasn't privy to her diet but suspected her symptoms were diet related. She, on the other hand, was certain she had some kind of infection similar to what her mother died from fifteen years before.

Finally I found a doctor and took her for weekly visits. It was a twenty minute trip and I soon became frustrated. To cut to the chase I began sitting in on the visits and within two visits it became evident that my mother had a severe case of Candida Albicans. I guided the doctor into having her remove the coconut syrup, sweets, and fruit and within a month she was feeling better once again.

Three years later, my mother's symptoms returned along with a urinary tract infection. The doctor we had seen was no longer in practice and we had to find another one. He was young and I hoped would be nutritionally oriented--he wasn't. He ordered a ton of tests--upper and lower GI track which showed nothing. He treated her for the urinary tract infection with an antibiotic (as I expected) and she responded by having panic attacks in addition to all her other symptoms. Ultimately he decided she was suffering from depression and prescribed Prozac. She became more fatigued with more episodes of panic and continued stomach problems. I didn't sit in on these sessions and in hind sight wish I had.

I suggested she look at her diet and again she was convinced she had an infection and needed to be hospitalized. Ultimately she got fed up with the depression diagnosis and we went searching for a nutritionally oriented physician. This time I decided I would accompany her in every session. With my direction, the doctor ordered tests to once again confirm the presence of Candida Albicans. Six months and a dozen doctor visits later, my mother's panic symptoms were gone along with all stomach and GI track issues. However, the fatigue continued even after many nutritional supplements and chelation therapy with EDTA.

My mother stayed away from sugar to the extent she believed herself to be diabetic--for a while, but her energy never returned.

Another year or two passed and her diet again shifted to carbohydrates in the form of fruits and cookies from the health food store. The fatigue worsened and her stomach symptoms again reappeared. She wouldn't listen to my dietary advice as she was certain she had this mortal infection. I met with her doctor privately before her session and shared my point of view regarding her diet--he agreed. During the visit he questioned her about her diet. She was eating primarily carbohydrates with no vegetables and little protein. He "read her the riot act." She began adding veggies and protein and began feeling better.

Her regular doctor wasn't available for her next med check (Armor Thyroid) and she saw one of the other affiliates in the same office. She never went back to the doctor who read her the riot act, began bad mouthing him as being a bad doctor and she continued being fatigued.

Her new doctor was new to the field of medicine and easy to work with. I suggested a test for Lyme disease and he concurred. We ordered a test from Bowen Labs at 1200 S. Pinellas Ave., Units 11 & 12, Tarpoon Springs, Florida 34689 (Phone # 727-037-9077). Chronic Lyme disease often shows up negative with standard tests. Bowen uses microscopy and finds it when it's often missed by standard laboratory techniques. Sure enough the tests came back positive and antibiotics were started.

Unfortunately, she couldn't tolerate the antibiotics nor the naturopathic remedy of cat's claw to replace antibiotics. About this time she met a man who recently lost his wife. She had an obvious renewed interest in life and with a fairly strict diet her energy returned--love conquers all.

With the passing of time, for various ridiculous reasons, she didn't allow the romance to develop--fearful of what others would say. Nothing I could say would make a difference--her limitations are owned by her and her alone which could be the subject of another article.

Feeling much better, her diet began expanding to include more fruit and carbohydrates and within six months I took her to emergency at the hospital. Again she was certain she had a mortal infection and was discharged after a half dozen negative tests.

Now, you'd think that with all her past experience with diet, she'd be open to getting back to a healthy diet. However, her memory was significantly compromised. she had trouble remembering anything for more than a few minutes--a symptom of Lyme disease.

Again, I worked with her doctor in shifting her diet away from carbohydrates. But what's left to eat? She dislikes meat of any kind (especially fish) and thinks eating two broccoli crowns a week is adequate.

At wits end, I ordered a Vita Mix and began making her a drink comprising of a clove of garlic, a red beet, stalk of celery, and a carrot. I told her doctor of my plan and he suggested I add protein powder, Pro Biotics and Intestinal Support with L-Glutamine (nutrients for the intestinal track), I went one step further and added a dropper of cat's claw (for the Lyme disease).

About the doctor: She wanted to tell him he was the best doctor she ever had until her last visit--the first one I missed--when he basically gave her the "brush off" and rushed her out the door. "He was totally a different doctor when you are there. I think he's afraid of you," she said to me.

Now, I'm not an intimidating type of person and the point is that if you want the best of care for your elderly parents accompany them in the visits with the doctor, look at their diet to make sure it's not lopsided (older folks regress to child like preferences), and the drink I make with a Vita Mix will be healthy for every one--you as well as your parents.
